new month, new recipe

This one I picked up from my sister in law. It's not a main dish, but a nice salad for summer when your grilling chicken. Now when I first saw the ingredients I was a little iffy about trying it. But I promise it's super delicious!

Cost- $12-$15 Serves-5-10 people
ingredients-
Reduced fat mayo, frozen peas
1 package of bacon, romaine lettuce
mozzerella cheese. 6 hard boiled eggs
green onion chives, salt & pepper
{Step 1}
Cook bacon, boil and then thinly slice eggs, shread cheese,
cut up green onion chives, and heat up peas.
{Step 2}
Starting from the bottom layer:
lettuce, s & p, egg slices
s & p, peas, lettuce
bacon, cheese, s & p
spread mayo over the top
then sprinkle green onions over it
{Step 3}
Refrigerate from anwhere between 12 - 24 hours. I go with 12, my sister in law does 24. Both taste great. Toss before serving and you're done!

adventures in cooking

Let's pretend like its still February
 because I completely forgot to try a new recipe last month.
A day late but here is recipe #2. Recipe from my bff.

Cost- $15
Serves-6-8 people
ingredients-
6-8 green peppers
1 lb of ground beef
2 + cups of cheese (I always add more cheese to everything)
salt & pepper
onion
garlic powder (I gave it a good swirl, add to your liking)
1 cup and a 1/2 instant brown rice
6 8oz cans of tomato sauce

{Step 1}
Heat oven at 350. Boil Peppers for 10-15 minutes. I took out the seeds first. Then make instant rice.
{Step 2}
Brown meat, mix in cheese, onion, salt pepper, garlic powder, rice and 5 cans of tomato sauce. Mix well.
{Step 3}
Stuff peppers to your liking and put in oven for 40 min. I put a little water on the bottom of the pan so they wouldn't burn.
{Step 4}
Pull out and pour last can of sauce over tops of peppers and top it with a handful of cheese and put back in oven for another 5 minutes.
{Step 5}
take out and enjoy!


2 down, 8 to go to make the resolution.

I didn't forget

Week 3 into 2011 and I haven't forgotten the resolution already. I promised to learn 10 new recipes by the end of the year and here is my #1. The perfect cold weather meal.


Cost-$10
Serves-An army
Ingredients-
1 large can of ranch style beans
1-2 lbs of ground beef
1 large can of crushed tomatos
2 packages of chili mix
1 tablespoon of chili powder
1/2 a can of diced green chilis
shredded cheese
onion
sour cream optional

Step 1- Brown meat and mix in chopped onion.
Step 2-Mix in all ingredients except for sour cream and cheese
Step 3- Simmer on medium low for an 1 hr to 2 hrs
Step 4- Serve with cheese and/or sour cream on top with crackers or cornbread on the side.

The husband rated this a 9!

The plan for 2011

I love this quote because it means there's still hope for me. Stephen and I started dating back in 2003 and I promised him that I would learn to cook once we were married. We were married in 2005 and then I promised him it would happen once we had kids. Micah came in 2006, Skylar in 2009 and here I am 25 and I have a good 3, maybe 4 decent recipes under my belt. Terrible! So this years resolution (yes I make them and I've kept them the last 2 years) is to perfect 10 new meals. So here begins my first adventures in cooking post. Now to find a cute recipe book on etsy to put them in.

Now this doesn't actually count as one of the 10 because I've been making this for years. This is my absolute favorite fast easy lunch meal and I wanted to share it with you because its the best!
Cost-Under $5
Feeds-2 adults
Ingredients-1 small can of tomato sauce
1 package of noodles
1 cube of chicken bouillan
shredded cheese
So here's my version:
Start by pouring a little splash of vegetable oil at the bottom of a medium sized skillet. Then add the bag of noodles and stir them around the pan on medium high heat until the noodles are a golden brown. Quickly throw in the can of tomato sauce, and fill up the empty can with water and pour it in. Add another can full of water and the cube of bouillan and heat it up to a boil. Let it boil for 2 - 3 minutes, then turn it down to medium low and cover until the sauce thickens. Make sure and stir frequently so the noodles don't stick to the bottom. Once its thick enough, add as much cheese as you want. I think the more cheese the better. Add a dash of salt & pepper and your done. This is a great meal for kids too. I could eat this everyday.
